Marcus to me: We cooked a lot this week.
But we all know that three meals is pretty much where we max out on food, leftovers and time. I’m sure it’s not hard to believe that at this moment our fridge is packed.
Monday – Catch-Up Chicken, Cauliflower Everyone Loves and Pititim from Balaboosta
Just consider this Balaboosta: Round Two. I think if I make this chicken again (which we will), I would brown it first and roast it in an open pan v. a closed dutch oven. Crispy skin should always be of the highest consideration when you’re cooking chicken that has…skin.
Our Israeli couscous is blended because I discovered that we still had some stray whole wheat stuff floating around in the pantry. You know how that goes.
Tuesday – Breakfast Tacos and Elote en Vaso from The Homesick Texan, Guacamole
Breakfast tacos are always fool-proof and we still have some frozen Green Chorizo stashed away.
This Elote is Marcus’ favorite iteration of Corn Not On A Cob and I can’t blame him. It is profoundly delicious. The mayo-cilantro-cayenne-lime juice combination probably goes a long way in helping it along.
Wednesday – Indian-Spiced Meat Kabobs from Real Food, Rice and Roasted Broccoli
Rant: For whatever reason, these patties did NOT want to stick together so we ended up browning all of the seasoned meat, end of story.
I like to think that we really mastered the raita this time. We all know that I am a sauce lover of the highest order and since this is based on plain (greek) yogurt there’s no shame in going a little bit (or a lot) overboard.
