This week, we found chicken thighs at Rainbow for…$0.99/lb, which was miraculous because we used the last of our stock two weeks ago. Naturally that resulted in us dragging home 20 pounds of chicken, but I am not ashamed in the slightest.

To make a long story really short, when I was trying to send a copy of this book to Beka, I accidentally shipped the first copy to the wrong address and thus I attempted to order and ship it to her twice. In an act of God, Amazon somehow ensured that she received both copies, though one of them showed up nearly three weeks after the first.
Since I was planning to purchase this book for us for Valentine’s Day anyway, Beka offered to bring Copy #2 to Houston for me, and it was good.
The first time I cook out of a cookbook, I like to make a complete meal if possible so that I can get a feel of where things are going to go. Marcus ate seconds of the carrots if that tells you anything.
Wednesday – Sesame-Spiced Turkey Meatballs and Smashed Chickpea Salad from The Smitten Kitchen and Garlic Green Beans from Great, Easy Meals
Marcus and Mom were both ironically in Georgia on business, so I had Dad for dinner. I picked this meal for dinner because (1) we didn’t make it last week and (2) it comes together really quickly. As in, over the course of a half-hour everything was done. Do have experience on my side with this one? Yes. But I am willing to own that.
