This week, my ability to schedule my social life went totally off the rails. I got to eat leftovers from Big Bowl twice (the best ever), but clearly did not spend much time in the kitchen at all. More evidence: the disappearance of Channa Masala and Slow-Cooker Creamy Chicken and Mushroom Pot Pie from our freezer.
Monday- Chicken Tandoori from Great, Easy Meals with rice (Marcus), Trader Joe’s Garlic Naan (me) and Roasted Broccoli
It feels as though we haven’t made Indian food for ages. Which is pretty much the truth, when you think about it. What’s silly is that even though we have made this tandoori recipe from this cookbook, I completely forgot that it existed. Which is really, tragically, sad because it was so supremely good. Other pro: it was a really easy marinade to mix up.
Since y’all know the el cheapo chicken thighs are the only way I roll, I just made sure to pull the skin off after thawing them. Not a terrifically complicated process at all and hey, Presto! Skinless thighs. If I were a more ambitious person, I could have hacked the bone out as well, but that seemed like senseless extra work.
And, if you’re looking for some good chutneys, the ones pictured here are Swad’s Corriander and Trader Joe’s Mango. We keep them on hand at all times, because you just never know.
