Friday Food Round-Up!

This week, more meals shared than meals eaten by us alone.  It is good to fill the dinner table with people that are well-beloved.

Sunday – French Stew over Crusty Bread with Salad

On Sunday night, we went downtown to watch The Wolf of Wall Street. 

My peace offering = a warm meal.

Marcus’ perspective: We’ve made French Stew quite a bit lately.  If that is bad, I don’t want to be right.  I think of it as spreading joy.

Tuesday – Hoisin Chicken with Cucumber Salad from Great, Easy Meals and Brown Rice

More often than not, when I make this chicken I either forget to make the cucumber salad outright or I forget the cucumber salad in the fridge.

No one is perfect.

On this particular evening it all came together in one place on one plate.

Wednesday – West Texas Stacked Enchiladas from The Homesick Texan with Cilantro-Lime Rice and Guacamole

Mom was in California for business, so Marcus and I invited Dad over for dinner.  Stacked enchiladas are one of my FAVORITE dinners, but I understand that scratch enchilada sauce may not be a universal taste.

Marcus loves them.  Dad was a fan.  I was…pleased.

I know I’m always telling y’all that you need to make your own scratch guacamole because it is…freeing.  But if you’re looking for another (easy) fancy way to dress up your dinner, knowing how to make Cilantro-Lime Rice is another great life skill to have.

  1. You make those West Texas Stacked Enchiladas all of the time. It’s one of the recipes I haven’t tried out of that cookbook. I think it’s time.
