This could have been a four-dinner (read: banner) week, but Mom offered up a Monday night supper and my reaction was instant. YES.
That being said, we didn’t do too badly for ourselves over the remainder of the week.
Sunday – Green Chile Posole with Black Beans from The Homesick Texan
It has been such a long time since we have had the chance to try something new from The Homesick Texan. And shamefully, there is probably still half a book worth of recipes to action. Actually, that’s probably the best possible news, because all of it is so delightful.
This soup is a whole lot of pureeing and dumping, which made for a cozy Sunday evening supper. However, I think there could be a lot to be said for sneaking this one into the weeknight rotation as well.
Wednesday – Turkey and Zucchini Burgers with Green Onion and Cumin, Saffron Rice with Barberries, Pistachio and Mixed Herbs from Jerusalem
It has been So Long since we have actioned any recipes from this cookbook. Really. I’m thinking Spring.
I have to admit that the real reason we probably haven’t cooked more out of this book lately is because some of the recipes in this book are Intimidating. Or take Time. But one bite of that “burger” and I remembered exactly why we own this book. My repertoire needs expanding.
Thursday – Chalupas with Uncle Richard’s Hot Sauce from The Homesick Texan and Guacamole
This meal is so basic. And yet it is Soul-Filling. Everyone loves a Chalupa. Uncle Richard’s Hot Sauce? Is by far the easiest to make and most delicious salsa I have ever eaten.
Combining these things with a hearty dollop of guacamole? Now that’s the right way to end the week.
