Wonderful discovery of the week: Cub was selling chicken thighs and drumsticks for $0.99 per pound. I promptly grabbed 16 pounds of chicken thighs and proceeded to break the packages down into meal-sized bags for the freezer.
Seriously, I need a chest freezer.
Sunday – Chickpeas in Curried Coconut Broth from Cooking Light: Slow Cooker Tonight! with Brown Rice and Roasted Broccoli
We had just gotten home from the cabin. Marcus was playing a league game for frisbee. I was at the in-laws Sukkot party.
The crockpot was a no-brainer.
Perks: It was an absolute pantry meal. The whole thing probably cost a total of $7 and it was vegetarian.
The big modification I made was to use two tablespoons of corn starch to thicken the sauce since it seemed to be just a bit on the soup-y side.
Tuesday – Caramel Chicken with Rice and Steamed Asparagus
There have been some beyond-wonderful recipes in bon appetit lately. That this one was written for skin-on, bone-in chicken thighs? So convenient.
Honestly, this meal probably would have been more appropriately served with snow peas or garlic green beans. But there was just such beautiful, fresh, skinny asparagus at ALDI. I could not resist.
