I think that this week will forever be remembered as the week of Mass Cooking and Freezing things. Every meal we actioned, something went into the freezer.
Given that I have no real expectation that this trend will continue, I am more than happy to take what I can get.
Sunday – West Texas Stacked Enchiladas and Red Chile Rice from The Homesick Texan, Guacamole
I can’t remember the last time we had stacked enchiladas, but I do know that our biggest obstacle to having them all day every day is that the sauce that makes these so special is a from-scratch thing.
Since I knew I had the time on Sunday and doubling a batch of enchilada sauce takes absolutely no effort (zero!) on behalf of the cook beyond having the appropriate ingredients at hand, I did just that. And popped that second batch of sauce straight into the freezer. Let’s not try to think about just how long it took me to figure this strategy out.
Monday – Three-Bean Vegetarian Chili from Cooking Light: Slow Cooker Tonight! and Cornbread From A Box That Came From Georgia
Brady gave me this cookbook for my birthday. And I think it has become apparent over the past few years that Marcus and I are not major slow cookers.
But Oh My God. As I started to flip through the recipes in this book, I realized that 75% of these recipes are keepers. So I am really looking forward to the chance to cook our way through it!
I technically cooked this meal on Sunday alongside our enchiladas. You see, I was planning on a happy hour excursion Monday evening and wanted to make sure that both Marcus and I had something.
Well, happy hour got re-scheduled and that left us with time for a proper dinner together, so I snatched a couple of boxed cornbread mixes out of the pantry that Mom brought back from Georgia and whipped up some corn muffins as well.
We ended up freezing another dinner’s worth (because Crockpot meals always mean enough food to feed an army) along with the leftover cornbread.
Tuesday – Chicken Tikka Masala, Rice, Roasted Broccoli and Garlic Naan from Trader Joe’s
Mom is out-of-town again this week so we had Dad over for dinner. He loves Indian food and she despises it, so this was the most logical dish to throw together.

Oh, the shame.
Since I was not about to hop off of the freezing party-train (and I wanted to make sure that there was enough for dinner and leftovers for the three of us), once again I doubled the recipe and actioned three pounds worth of chicken. Yes, it was Quite A Bit. Yes, it was a rockin’ excuse to pull out my big Le Creuset pot.
It was also Quite Delicious.
