So let’s rejoice because summer eating means pretty much as long as you know how to boil/simmer/grill you will be A-Okay.
Or, we could also describe this week as: can you tell what I bought at the farm this week?
Monday – Roasted Chicken Thighs with 4-3-2-1 Spice Rub, Hot Corn, Tomato and Mozzarella Salad, Mexican Fried Potatoes from The Homesick Texan
Just call this the meal with no direction. I knew we were having the chicken and I knew we would be eating corn, and the rest of it just kind of…Manifested.
Maybe the corn is sort of like an Italian Elote, or maybe I’m just lazy. It’s hard to know.
Tuesday – Smoked Hot Link and Smoked Cheddarwurst Sausages from Butcher & the Boar, Dijon Potatoes, Garlic Green Beans from Great, Easy Meals and Corn on the Cob
Mom was out of town on business this week and so she suggested that it might be nice to action Dad a dinner while she was away. Since we can’t eat The Pork at our house, I directed him to source Butcher & the Boar sausages from Lunds (because I have been DYING to try them) and I brought over all of the needed materials for Sides.
Buy the sausages. They are so 11/10.
Wednesday – Sundried Tomato Chicken Sausages from Trader Joe’s with Corn on the Cob and Caprese Salad
Galina and Lindsey came over for a soul filling dinner where Galina brought the salad bar of the gods and Lindsey brought birthday cupcakes for dessert (Galina’s birthday is about a week before mine). It was just The Best.
