We got back on Sunday and proceeded to have a week full of…events.
So mostly we didn’t cook and mostly I made a lot of salads involving varying combinations of mangoes, avocados, strawberries and peanuts.
If continuing to obsess over that combination is wrong, then I do not want to be right.
Thursday – Cheese Enchiladas with Chili con Carne and Red Chile Rice from The Homesick Texan and leftover Refried Black Beans from Trader Joe’s
Fact: These enchiladas never turn out quite the way that I expect them to. To the point where next time I may just stack them and call it good.
Also fact: I never put 1/4 cup of shredded cheese in the enchiladas.
The beans were a surprise addition – Marcus had some breakfast tacos earlier in the week and no one person needs an entire can of refried beans when they’re making breakfast tacos.
It’s good to be reunited with The Homesick Texan.
