Apparently this week, it’s Groundhog Day. I knew we weren’t going to have a lot of time for cooking and, well, the heart wants what the heart wants.
This salad is such a perfect blend of things. The barley, the beans, the lemon zest, the crisped-up cauliflower. For all of the recipes that I never action out of bon appetit, when I find one that I like I REALLY like it.
