It’s Passover this week, so things are sparse. We attended Seders on Monday and Tuesday, which left us with a lot of lunch-y leftovers. On Wednesday we did a dinner with some friends.
What I will say was surprising about this week: The way that The Homesick Texan factored into all of this. We made Lisa’s Cilantro Pesto Green Beans for the Tuesday Seder, and we made West Texas Stacked Enchiladas (with matzo instead of tortillas) on Wednesday night.
Thursday – Matzo Pizza with Cheddar Cheese, Caramelized Onions, Roasted Mushrooms and Red Pepper
We made it to the 4th day of Passover before we had to bust this one out. So pretty much, I’m feeling like that’s a success. I would barely qualify it as cooking, but we did something with the mushrooms and the onions, which lent the whole endeavor a bit of dignity.
And as much as I like to disparage it, matzo pizza really is like an adult Lunchable. So pretty much, it is the greatest.
