Sunday – Great Grandma Turano’s Meatballs from Dinner: A Love Story
I made these with the full two pounds of ground turkey so that I could throw some into the freezer to build up a stash of things for Marcus to eat when I’m out of town to remind him of how much he misses me SLASH for him to thaw when I get home and am desperately jetlagged.
Yes, you could serve this over pasta. And I am sure that would change lives. But I prefer to eat it straight with a bit of crusty bread for dipping. It’s a lifestyle.
Tuesday – Breakfast Tacos with Green Chorizo from The Homesick Texan
Texan brunch is what everyone should be doing on New Year’s Day.
We promised my parents a very long time ago that we would have them over for dinner to do the whole Indian food thing. So we slapped this on the calendar two months out.
Blessedly, the only thing I actually had to make (since I was busy being repulsed by all food) was the Channa Masala, which is officially one of our easiest meals. The rest of it came from the freezer (thank you, foresight) or the wild.
This is Marcus’ plate. I choked down two samosas (one that tasted appropriately bland, the other being FAR too colorful) and a piece of naan.
Wednesday – Simple, Perfect Chili from The Pioneer Woman Cooks with Northern Cornbread (from the freezer!) from The Joy of Cooking
1. Thank you Ree. I say this every time. But truly, from the bottom of my heart, THANK YOU. This chili has re-shaped the world I live in.
2. Thank God I had that epiphany last go-round to make the cornbread into corn muffins! I still have five left in the freezer just waiting for the next time we action chili.
