A Bit of Baking

Today, I decided to action some baking.  Because The Holidays are long behind us and baking is Hardcore Soothing.

I know, I know.  How we came from the place where baking was anxiety-inducing to here and now, I will never understand.

I actioned the Chewy Chocolate-Raspberry Cookies from Veganomicon.  I was into the recipe for the following reasons:

  • I LOVE the chocolate-raspberry combination.
  • I’ve never attempted Vegan Baking.
  • I’ve never baked a chocolate cookie.
  • This recipe didn’t include any Faux-substitutes in the place of eggs/butter/milk.  Labeling something as Vegan doesn’t make it okay to bake with un-butter.

Most important order of business, does anyone else have a baking sheet that they would describe as being Seasoned?

Because obviously I do.  I think it can officially be classified as one of my Stalwarts.

I shouldn’t have been surprised about the fact that the Baking Cocoa that has been hanging out in my pantry for the last year still had the original seal on it.  But it did, so I got to deal with that.

It was just time, right?

The actual mixing and what-have-you was a relatively quick process.  I got to use the better part of a jar of Raspberry All-Fruit Spread that had been languishing in my fridge.  Which, retrospectively, I am beginning to suspect that this recipe would do just as well with Orange Marmalade.  You know, in the way that would evoke the Chocolate Oranges of Christmastime.

Let’s all remember that, no?

In addition I was directed to layer-in some vanilla and almond extracts as well.  Almond Extract: Also on the list of things in my pantry that still had the seal on it until this afternoon.

We were just breaking down barriers left and right in the kitchen today.

The finished product.  Look.

After eating one, I can completely see how having these with some ice cream would be completely delightful.  They’re very chewy and the combination of raspberry-vanilla-almond works together in a way that suggests all three of them and none of them at the same time.

Marcus?  Pronounced them very good for a Vegan cookie.

Amen.

  1. I have not tried vegan baking. I think The Complete Package would throw me out on my ear if I did. The love of butter & red meat courses deeply through that man’s probably semi-clogged veins. That being said, your cookies look fantastic, and your combination of chocolate, raspberry and almond extract is inspired. I would absolutely try these. And then I would lie through my teeth to a certain someone. And I wouldn’t feel bad about it. Way to rock the oven today, Kat. I’m so proud of you. You’re a BAKER, girl!

  2. Yum my dear. My vegan years are long behind me, but these look pretty fab. I definitely wouldn’t turn my nose up at one (or three) of those babies. Also, I loved your actioning of the Nigella recipe a post or two back. I will have to grab her cook book.

    Okay let’s be honest here. We both know I’ve made hardly anything before. But that’s okay! Because I can live vicariously through your baking action.

    So impressed Kat. These look very Uniform. And Consistent. And we both know those two things make us tick.

  4. A) I love that you called your pan, “well seasoned”. Those ones are always the best in my book. My chocolate chip cookies on any other pan just aren’t the same.
    2) The word vegan next to baking would have sent me for the hills – so thanks for keeping it real, literally and figuratively.
    iii) Chocolate orange version – top of the list!

  5. My foray into the vegan lifestyle certainly forced me to step up my culinary skills. I knew if I told the hubbo the new thing in front of him was vegan and it ended up being vile, it would be the fault of the vegan component.

  6. I have never tried vegan baking, but I have yet to have any vegan baked goods that I’ve liked. All of the ones I’ve hard are hard and gross. Perhaps if I had a delicious vegan baked good, I’d change my mind. Like these. They look pretty good. How are they soft without butter? The spread?

  7. I haven’t tried vegan baking. The idea of baking without eggs and butter makes me feel a bit weepy, to be honest. But your cookies look great!

  8. Kat! So glad you answered number three. 🙂 Funny-after I wrote that one I thought, “that’s going to be a hard one to answer.”

    I’ve never done any vegan baking. But, your cookies look wonderful and I loved your comment about the “taste suggesting all three together but not separately,” very nice.

    In my pantry untouched….hmmmmmm-oh I know- these packets of sloppy joe’s seasonings. Not even sure how they got there. And not a big fan, I should just throw them out. 🙂 Take care,

  9. Not a big fan of vegan anything. My love of all things dairy runs too deep to even consider baking with an over-processed substitute. However those cookies look chewy & wonderful. Orange would definitely be appropriate.
