Friday Food Round-Up!

This was actually a banner week for cooking.  Had we not eaten leftover buffet for dinner on Wednesday night, we could have managed a fourth day of cooking.

Confession: After realizing how anticlimactic microwaving your dinner is, we vowed we would reserve leftovers (with the exception of those things that go well with soft-fried eggs) for lunchtime adventures.

Our culinary agenda?

Sunday – Channa Masala with Roasted Broccoli, Rice and Garlic Naan

Originally Michelle was going to come over on Sunday afternoon and we were going to crockpot the pants off of something.

Except that didn’t happen.  Uno: My crockpot is still in the closet beneath the stairs.  Dos: We didn’t actually pick a recipe.

So I thought it might make just as much sense to action an easy dish that creates A TON of food.  Because that’s sort of what’s at the heart of making something in a crockpot, right?

As we all know Channa Masala is always a good answer for that.  Fast, easy, and full of things from the pantry.  Plus, now some of it has taken up residence in the freezer.

Monday – Mom’s Green Chile Enchiladas and Guacamole

When I made enchiladas to bring over to Val and Aaron’s two weeks ago, Marcus gave me like, the most tragic sad puppy eyes I have ever seen.  After giving him a spoonful of the filling and turning him away, I swore up and down that I would make him a batch, and soon!

So this week, it was only appropriate that I kill off our bag of Immortal Tortillas (I have no idea as to how tortillas carry the sell-by date that they do) and make good on my promise.

It’s the same rodeo, every time.  And I have to say, with some recipes, the end result is always a little bit different.  With this recipe, the end result is always the same, even if you end up doing it a little bit differently.

Tuesday – Hanger Steak with Mushrooms and Red Wine Sauce, Oven Fries and Roasted Broccoli

I’ve been subscribing to bon appetit for a little over a year now, and even though you would think that I cook something out of there every month, that’s usually not the case.

I jumped on this dish because it was fast, easy, affordable and would work well with the steak we sourced from ALDI a few months ago.

Plus, as I was de-glazing the pan, I realized how long it has been since I’ve actioned anything with a wine sauce attached to it.  Heresy, I know.

Bonus: It reincarnated extremely well as leftovers.  I’m actually pretty sure the dish tasted better when I brought it to lunch on Thursday than it did when I ate it the first time!
