Friday Food Round-Up

It’s Friday, so it’s probably time for our first food round-up.  It was a little weird, not posting snaps throughout the week.  But I think we can all agree, this is for the best.

The theme of the week: Drown everything in sauce.

Monday was a Coq au Vin.

Yes, those would be Garlic Smashed Yukon Gold Potatoes lurking beneath the surface.

After reading over the recipe that I printed off (and roughly followed), I cracked open How to Cook Everything and Nigella Express to see what they had to say about the matter.

My reading resulted in the following modifications: we used two bouillon cubes instead of broth, tossed in a tablespoon of garlic, did not measure the wine at all and ended up using ~1/2 bottle, omitted the canadian bacon and added an onion, AND after browning the chicken and removing it we returned it to the pan and braised over medium low heat for 30 minutes, turning once halfway through.

We served this over Garlic Smashed Potatoes, but really you could probably do a nice, roasted red potato and be on Cloud Nine.

I would definitely make this dish again (Marcus even ate the carrots!), but first I definitely want to give the Coq au Riesling from Nigella Express a shot.

Thursday brought Jenna’s Channa Masala.

Surprise, surprise.

Glory on a plate.

I think the next dish on our Indian docket will be some form of Beef Vindaloo, but we already had one meat meal planned out for the week.  This was an easy one to rotate in.

Plus, once again it was HEAVEN.

Our only modification was using one can of chickpeas instead of two.  We ended up with HEAPS of sauce (hooray!) and more than enough food to ensure that we would each be able to bring leftovers for lunch (essential).

Next week’s agenda: Ree’s CPK BBQ Chicken Pizza and Aarti’s Beef Vindaloo.

Marcus seems to be going through some sort of bizarre, BBQ sauce-fueled renaissance, which is obviously excellent news for me.  Thank you Rock Bottom Brewery, from the bottom of my heart for revealing the Glory That Is BBQ Chicken Pizza to my dear fiance.

  1. Sadly this was not a week for me in the kitchen! I somehow got busy and reverted back to quick microwavable meals….there were a few of Amy’s Organic Soy Macaroni and Cheese dishes and a trip to Subway in there.
    There’s always next week!

  2. We are *so* on the same chicken wave. Coq au Reisling sounds like a must try. Sadly, the only meat dish we had this week was meatloaf. Not my favorite, but the rest of the boys (including Hubby) love it. That said, I did make a killer version of PW’s Brisket last week for friends. It was to die.

  3. The other night I sauted chicken sausage with garlic, red onions, and artichoke. I had a little balsamic at the end and served it over spaghetti squah- I thought it was pretty simple, but my husband love it!

  4. No exciting cooking for me. I really don’t know what it is about BBQ pizza, but it is so good!

  5. BBQ pizza is the best! One time I made one on my backyard grill and it was HEAVEN on a plate! Not a fan of Bobby Flay, but in this case he knew what was up!

  6. I douse everything in salsa so we aren’t too different. Peach salsa from TJ’s can make absolutely anything palatable. Try it!

    Love the channa masala! Beef totally intimidates me but if you are looking for another Indian thing to make try the Tandoori Chicken Pizza that CPK has – I’ve made it a few times and it is fabulous and easy.

    I made a lasagna this week – I couldn’t eat it (of course) but my family didn’t say horrible things about it. I consider this success!

  7. Last week, since Mom was here I did actually cook a little. We did burritos, spaghetti squash, and my great grandmas spaghetti pie. But, the winner is definitely my Mom’s burritos. They are my favorite!
