I guess the theme of this week is that we ate avocado here and there. Or That One Time when I opened Great, Easy Meals when I did our meal planning on a Friday evening and I just did not put it down.
I have said this once and I will gladly say it again – if you want to buy yourself some sanity, source a few cookbooks for people who have families and/or children who refuse to eat. The recipes are always fast, and everyone at the table always leaves happy.
How long have I had this enchilada recipe in my recipe binder? No seriously. Guess. Because it is not as old as those dinosaur ground turkey recipes from Real Food, but it is definitely three years old. Three!
A big motivator for dusting this recipe off and doing it is because I am working my way through the monster bottle of Rudy’s BBQ sauce that Billy gave me for Christmas. I can’t open any of my other BBQ sauce from my trip to Texas until it is done.
Monday – Chicken Tandoori from Great, Easy Meals, Roasted Broccoli, Trader Joe’s Garlic Naan and Rice
Very simple tale for you all: Now that I remember that we have this recipe (AKA it exists), we need to make it more often because it is such a flavor-packed way to deal with our lovely chicken thighs.
Wednesday – Jerk Turkey Burgers with Mango Slaw from Great, Easy Meals and Sauteed Cauliflower
I love coleslaw. Marcus’ love of coleslaw grows with each passing year. Even though the recipe said to put it on the burger (which is also a delicious combination, by the way), I decided that I wanted to dabble with it, which is why it ended up on the side and the avocado slices ended up on top of the burger.
My life. So hard.
We dressed the cauliflower with some leftover vinaigrette I scrounged out of our fridge. You know, flavor boosting and all of that.
