We got food poisoning on Sunday night. The rest of the week was more or less an eating experiment. Tuesday’s dinner may have been a bit adventuresome, but by the time we hit Wednesday night, we were truly hungry.
Originally, I had aspirations of making Peach-Whiskey Barbecue Chicken. But I got home late. The recipe was going to take an hour and a half. It was not happen.
Back-up plan: That Magic Spice Rub that I made a massive batch of ages ago.
45 minutes later, dinner was on the table.
Wednesday - Sambal Chicken Skewers with Garlic Peas and Green Beans, and Rice
Things to know: If you don’t have brown sugar on hand, white sugar + molasses works. If you are ready to make green beans but you only have a quarter bag of them in the freezer (seriously why the madness), mixing them with peas works.
Finally, if you are grilling these skewers inside, the spicy will aerosolize and choke you and your family to death. Marcus and I had to open the windows and action the fan in the middle of a functional (5″ snowfall) blizzard to deal with the situation.
All of that aside, this meal was WONDERFUL.
