Miscellaneous – Black Bean, Roasted Corn & Avocado Salad On a Bed of Red Quinoa from The Back Of A Bag Of Trader Joe’s Red Quinoa

I needed to bring a dish to share for our hamantaschen baking-fest.
And I needed some leftovers to fill out the odd-lunch this week.
Let’s all give an amen for quinoa salad.
Monday – Shakshuka from Jerusalem

Marcus and I made a version of shakshuka from a promotional bon appetit cookbook awhile back. And it was…fine. An easy meal that I would make again.
Then I had shakshuka in Jerusalem – some of it good and some of it bad.
Ottolenghi’s version was a revelation.
What escaped off-camera was the crusty bread we were dipping into the arrangement.
It does incorporate 2T of harissa into the dish, so if you’re spice-averse, consider yourself warned. To me, it was just the perfect touch.
Wednesday – Sesame-Spiced Turkey Meatballs and Smashed Chickpea Salad from The Smitten Kitchen.

I didn’t know what to expect with the combination of chickpea salad and meatballs.
After I went back to the cookbook and read Deb’s description of the meal, I noticed the comparison to falafel. And suddenly, everything made sense.
The world was a little bit brighter.

Love meatballs. So. Much.
By the way, finally made channa masala a few weeks ago. So easy, so delicious (though my kids were not fans). Actually, now that I’m thinking about it, I should make some this weekend. Kicking myself for taking so long to try it.
