We managed to cook three times this week. And while that’s probably average for us during the winter, coming off of the last month it felt like we were cooking all of the things. I loved it.
Sunday – Perfect Meatloaf with Chipotle Ketchup from Ruhlman’s Twenty and Garlic Smashed Potatoes

What was phenomenal about this dish: The Chipotle Ketchup. I will happily make this again for any and every situation.
The meatloaf had a great flavor, but 2.5 lbs of meat (we used ground turkey) and a water bath later, I wasn’t teriffically impressed. Like it was good, but for a total of two hours spent prepping and cooking the darned thing, I want it to taste like it is made of gold.
Monday – Tomato Curry from Nigella Kitchen with Rice, Roasted Broccoli and Trader Joe’s Garlic Naan

Easy and from the pantry. We lived on the wild side this time and threw in a jalapeno because, sometimes you just need to add a little extra heat.
What I didn’t realize is that there’s another vegetarian curry recipe in this book that I don’t recall making! So I think we’ll be actioning that next week.
Thursday – Meatloaf Tacos with Guacamole

In all seriousness, if you’re reading this and STILL haven’t actioned from-scratch guacamole, check yourself before you wreck yourself. Because it is heaven in a bowl.
What we did to reincarnate this: I broke up the meatloaf with a fork, watered down our chipotle ketchup, dumped the whole thing into a pot and heated it up.
Et voila.
They were delicious, but probably also the messiest tacos I have ever eaten in my natural life.

I do not reincarnate meatloaf. I barely tolerate it the first time, but since my house o’ men think it’s the best meal ever, I go there on occasion. But I’m really liking the idea of your tacos. I could totally do meatloaf more often if you just told me it was a taco.
Meatloaf is fine as a meatloaf sandwich the next day (fine is used very loosely). Unfortunately with a picky 3 year old we only make the most basic Meatloaf if we want her to eat any

I ate meatloaf growing up but if you can believe it haven’t made it since I’ve been married. My kids aren’t fans of beef and I hate cooking things they won’t eat. More specifically I hate cooking things I THINK they’ll love only to find myself with tons of leftovers for just little ol’ me (Glenn’s not crazy about leftovers, even when he loves the dish. What??)
Um, super delicious sounding week. Meatloaf sounds the best, but I’ve never tried it with ground turkey. Interesting. Might have to try that sometime.
